Aunt Lolly’s Oatmeal Chocolate Chip Cookies

Ingredients

1/4 pound butter (one stick), at room temperature

1/2 cup granulated sugar

1/2 cup brown sugar

1 egg

3/4 cup flour

1/2 teaspoon baking soda

1/2 teaspoon kosher salt

1/2 teaspoon vanilla extract

1/2 cup rolled oats

1/2 cup chocolate chips

Directions

Heat the oven to 375°F.

Using an electric mixer, cream the butter and sugar. Add the egg and mix. Add the flour, baking soda, salt, and vanilla, and mix.

Stir in the oatmeal using a wooden spoon.

Stir in the chocolate chips.

These cookies really spread, so use only about a tablespoon’s worth of dough and space well on cookie sheets lined with parchment.

Bake for 9 to 11 minutes.
